TOO fat Tuesday!

Today's Blog is going to be all about the food that I want to eat - and then a recipe that we can actually make!!!




This week's 





is....











I have had this crazy silly obsession with goat cheese lately.  It's texture is thick but creamy and it's taste is both sweet and tangy.  I read recently that it is a healthy alternative to cream cheese with twice the protein and half the fat and cholesterol.  So think twice before using cream cheese in your recipes!  Just switch to Goat cheese.  Here are a few tasty goat cheese treats: And I have found that avocado with goat cheese is the best!  And if you are near a Newk's stop in and try their Chicken Pesto sandwich.  They are responsible for placing this obsession in my mouth.  On this sandwich they have a great goat cheese spread.  It is to die for.  I would run 10 miles just to get this sandwich!  SOOO Good!

duh it will be lemon blueberry squares!









Blueberry Lemon Bars slightly adapted from Two Peas and Their Pod






For the crust: 


  • 1 1/2 cups graham cracker crumbs

  • 6 tablespoons butter, melted

  • 1/4 cup granulated sugar

  • Zest of one lemon


For the filling:




  • 2 large egg yolks

  • 1 (14 ounce can) sweetened condensed milk 

  • 1/2 cup fresh lemon juice

  • 1 teaspoon lemon zest

  • 1 cup fresh blueberries



Preheat the oven to 350 degrees F. Spray an 8x8 inch baking dish with cooking spray. Set aside.


In a medium bowl, combine the graham cracker crumbs, melted butter, sugar, and lemon zest. Stir until graham cracker crumbs are moist. Press crumbs firmly into the bottom and slightly up the sides of prepared pan. Bake the graham cracker crust for 10 minutes. Remove from oven and allow to cool to room temperature.


To make the filling, combine the egg yolks and condensed milk in a medium bowl. Stir in the lemon juice and lemon zest. Stir until mixture is smooth and begins to slightly thicken. Gently fold in the 3/4 of the blueberries, reserving some for the top. 


Pour the lemon blueberry filling evenly over the graham cracker crust then top with the remaining blueberries. Bake for 15 minutes, or until just set.


Cool for 10 minutes at room temperature, then refrigerate until completely chilled. Cut into bars and serve.

Beach fun - more like chill time!

Bethany and I are having a blast at the beach!!! And we have created a phrase "it's all about the blog!" so I have been taking good pictures all day and thinking I could so blog about this! Enjoy these pictures!!! And there is a surprise ending!!

My dad is good at a lot of things especially lawyer stuff, but one thing a judge wouldn't know he is good at is cooking breakfast! This is an egg sandwich he made for himself! No worries I made my own breakfast... Rude! Haha just kidding, we are having oatmeal most mornings!







Nom nom nom: holy cow we were watching just married this morning and they said nomnomnomit was so random but hilarious because we havebeen talking about it all week and using it!!! Funny huh!

There are big screens everywhere!! Today on the elliptical I was watching 3 different sports channels ::: Heaven!!!

Me to tell you not to ever ride in these because they are built on 3 frames and if someone were to t-bone you, it would split the limo in half! Dad said he had a case were 2 people died from that! YIKES!

Laura Leigh jumped in someones fountain on our golf cart ride. Haha it was so funny we dared her and he actually did it!





Tomorrow we are waking up to see the dolphins at 6 am and then running to Starbucks and then headed to the outletsto shop!! I'm so excited!! Polo here I come!

Here is your surprise!! My boyfriend (it is so fun to say that) Taylor with his cousin Harper! Adorable!! I love it!

My chill week has begun!

Okay, so after a week at Miss Arkansas one needs a bit of a break. So my family came to Destin! It has been a blast so far. I brought one of my best friends with me, well she kind of invited herself, but I'm so glad she did!!! It's been so fun thus far!!

Here is our story in pictures!!!

First we went to Target so Molly Anne could pick up some care package needs for her "friend" Patrick that is in the navy right now! As we were waiting : McKenzie, my cousin sees this card and the first thing she says is "man wouldn't you hate to be the model for this card!" hahaha are you serious!! I mean how Many times have u seen these cards and how many times do you think that!! Never!! She has been that funny the whole trip!!




This morning I was craving blueberry stuff so I made blueberry muffins, except we didnt have a muffin pan so we used a bundt Pan and made a Cake type thing! I adde extra blueberrys!









It looked wonderful!!!




Until I couldn't get it out havent really mastered that yet!




After breakfast, my dad took me and beth to the gym. This is how my dad keeps up with everything! I HEFTY zip lock! Talk about tacky! But I guess whatever floats your boat!




This is our gym in Destin.. On the inside it looks like a Hollywood gym! I'll post pictures tomorrow!




After workout we stopped at the seafood market! Favorite place in destin! Dad picks up crab salad, tuna salad, and 4 pounds of fresh shrimp!! YUM!




The raw fish! Please remember we just worked out!!
